Chocolate Refrigerator Cookies

Recipe from Ptelea

2 cups white sugar
1/2 cup milk
1/2 cup margarine
2 1/2 cups rolled oats
1/2 cup coconut
1/2 cup cocoa
1 tbsp vanilla
1/2 cup nuts (optional)

Mix first three ingredients in a saucepan; boil for 2 minutes.

Mix the remaining ingredients together in a bowl. Add the sugar mixture and mix well. Drop by teaspoonfuls onto cookie sheets and refrigerate until firm.

    I did make them last weekend, and they were awesome! Yum. Had a bit of trouble because I doubled the batch – they were a little too wet, so I might not quite double the butter/sugar next time.
