Chocolate Macaroons
3 oz. cream cheese, softened1/3 cup white sugar1 teaspoon vanilla1 cup flaked coconut½ cup finely chopped walnuts1/3 cup butter1 ½ cup flour1 cup white sugar¼ cup Dutch cocoa powder1 egg3 Tablespoons milk½ teaspoon baking soda

Buckeyes or Peanut Butter Balls
From my mom’s youngest sister and definitely a Christmas Eve family tradition
For about a shoebox full:
1 ½ c peanut butter1 c butter/margarine2c powdered sugar24 oz semi-sweet baking chocolate¼ box paraffin wax
For about 200:
1 – 500 g jar peanut butter1 ½ lb. butter/margarine6 c powdered sugar72 oz chocolate1/2 box paraffin wax

1 cup butter1 cup sugar1/2 cup brown sugar2 eggs1 teaspoon mint extract2 cup flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt1 cup oats2 cup chocolate chips
Mix in order and bake at 350 F for 10-15 minutes.
Notes:I always take special care to mix the two sugars together very well then smooth in the softened butter.

Brownie Chip Cookies
Found this one on the back of a bag of Chipits white chocolate chips and liked the idea of a cookie being almost as moist as brownie, so I gave them a try. Not too shabby, especially with the walnuts. Yum, yum. It’s always nice to have something different from the usual chocolate chip too.
